Vinification: The harvest is early (beginning of August) in order to obtain a balanced and aromatic wine. The berries are pressed as soon as they arrive at the winery in a pneumatic press. The juice is then cold settled for 48 hours. Fermentation takes place at low temperature in order to preserve the fresh and fruity aromas as much as possible. Maturing is done on fine lees to preserve the aromatic character of the Muscat.

Vinification: The yields in the vineyard are limited to concentrate the aromatic potential of the wine. Viognier is a grape variety that requires to be harvested at maturity in order to express its fullness and its full aromatic range. The grapes are directly pressed on arrival at the winery and then placed in thermo-regulated stainless steel vats. After cold static settling, alcoholic fermentation is carried out at low temperature to preserve the fruity aromas. In order to preserve the freshness of the wine, malolactic fermentation is not carried out.

Vinification: The grapes are harvested early at the end of August because of their proximity to the Hérault coast. Harvesting is carried out at night or very early in the morning in order to preserve all the freshness and integrity of the berries. As soon as they arrive at the winery, the grapes are immediately and delicately pressed in order to favour a very light colour. The first juices are run off and the presses are spread out to keep only the heart of the cuvée. The musts after pressing are settled statically in the cold for 48 to 72 hours to obtain a very limpid must and favour mineral expression. Alcoholic fermentation is carried out at temperatures of 15 and 18°C to favour the expression and freshness of the aromas. The wine is matured on its fine lees in stainless steel tanks for several weeks before bottling.

Vinification: The work begins in the vineyard with a precise and meticulous selection of the plots most suited to produce this type of wine (90% of the final result is the result of this precision work): the sanitary state must be perfect, the foliage must be healthy, fresh and dense, the grapes must have an optimal level of maturity. Indeed, the picking window is very small as the acid/sugar balance is so important for this type of wine. The vinification is very complex because we do not use sulphur or oenological inputs. The grapes are immediately pressed and cold settled in order to favour a natural stabilisation of the oxidisable compounds in the must by precipitation. Then the alcoholic fermentation is rapid and takes place in a neutralized atmosphere. Fermentation temperatures are regulated at 18°C. The wine is clarified by racking before malolactic fermentation and is then racked again and kept cold. The wine is bottled early enough in the year to preserve the aromatic expression. Maturing is done in the bottle.

Vinification: The work begins in the vineyard with a precise and meticulous selection of the plots most suitable for producing this type of wine (90% of the final result is the result of this precision work): the sanitary state must be perfect, the foliage must be healthy, fresh and dense, and the grapes must have an optimal level of maturity. Indeed, the picking window is very small, as the acid/sugar balance and the maturity of the tannins are so important for this type of wine. Red wine making is very traditional, except that we do not use SO2 or any other oenological input. The grapes are de-stemmed then the maceration phase lasts about 10 days during which we only work on the extraction by daily pumping over to encourage the expression of the fruit. Pressing takes place taking care to separate the presses, then the wines are racked in order to eliminate the coarsest lees before the malolactic fermentation. After the malolactic fermentation, the wines are racked again and then put in cold storage to guarantee their good stability in the vat.

Dress: Beautiful pale colour with slightly golden reflections.

Nose: The nose develops aromas of mango, dried fruit, almond and hazelnut as well as citrus fruit, grapefruit and orange blossom.

Mouth:Barrel ageing brings aromas of vanilla, cinnamon, fresh butter and spices. Its finish is marked by a beautiful minerality and a good length.

Vinification: The grapes are harvested at perfect maturity, in order to express the optimal potential of the grape variety. A meticulous sorting of the harvest is carried out when the grapes are picked and received. Grapes are worked under neutral gas in order to minimise the risk of oxidation of the musts. The grapes are destemmed, cooled to 8°C and sent to the press to extract the must. Particular attention is paid to the pressing process in order to preserve only the first and best quality juices. The juices are then settled more or less according to the desired aromatic profile. Fermentation lasts between 15 and more than 30 days depending on the degree of clarification and temperature applied. Part of the wine is vinified and then matured in 225-litre Bordeaux barrels for about 4 months, while the rest is vinified in stainless steel vats thermo-regulated at low temperature to preserve the freshness and integrity of the aromas. The particularity of this grape variety lies in the nobility of its aromas and the delicacy of its wines. Finally, after a light fining, the wine is bottled quite early to preserve the fresh and fruity character of the wines.

The wine is partially aged in 225-litre barrels for a few months to bring aromatic complexity while respecting the fruit and elegance of this grape variety

Vinification: Ballerine comes from the Limoux region, an exceptional terroir for the production of sparkling wines which were first produced at the Abbey of Saint Hilaire in 1531. This terroir is located at altitude, close to the Pyrenees mountain range and gives this brut rosé its airy side. The vinification and blending of Ballerine made mainly from Chardonnay and Pinot Noir give pride of place to the freshness and tension of this wine and connote the lightness of the ballerina.
