Paul Cluver Sauvignon Blanc 2019

The colour is clear and bright. The nose is fresh and clean with expressive flavour characteristics of passion fruit, grapefruit, gooseberry and black currant. These flavours follow through onto the palate which has a lovely creamy, yet elegant, texture – the result of extended lees contact and the portion of Semillon.

Paul Cluver Chardonnay 2018

On the nose this wine shows great citrus aspects and winter melon notes with some light toasted brioche in the back ground. Tangerine fruit and citrus blossom fragrances are apparent, with hints of vanilla pod and almond flakes. These characteristics follow through onto the palate. The fine, fresh acidity is natural, and adds poise and focus to the wine.

Food pairing: Fish, poultry, pork and game bird dishes work well with this wine. It works particularly well with creamy pastas and salmon dishes. The good acidity and balance between wood and fruit keeps the wine from being overly rich and consequently, great without food too. Mussel soup is a perfect match.

Paul Cluver Seven Flags Pinot Noir 2018

Andries believes that the essence of a great Pinot noir is the purity of fruit and balanced acidity which gives structure to the wine. This wine has this essence, substantiated by its natural acidity. This is a very well defined wine with amazing poise, the colour is bright red, alluring and luminous. The aroma of this wine has wonderful elegant red and dark berry fruit expression ending with lovely soft oak notes. The palate is a combination of firm concentration and freshness. These flavours follow through onto the palate with some salivating savoury notes that has amazing length and complexity with great freshness lifting the fruit.

Winemaking: Extensive individual berry sorting was done by hand prior to destemming, no crushing of the grapes is allowed. After destemming the berries is transported in satellite tanks and the fermenting vats is filled by gravity. This was followed by cold maceration at 12°- 14° Celsius for 6 days. The fermentation in 3.5-ton wooden vats was allowed to start naturally, some vats completed fermentation without inoculation and others was inoculated with selected Burgundian yeast. During the fermentation, the skin cap was punched through by hand no more than twice per day. After fermentation, the wine pressed and racked to barrel for malolactic fermentation and remained on the fine lees for 12 months. To confirm the superiority of the vineyard sites, the earmarked Seven Flags Pinot noir barrels are tasted blind in conjunction with all the other Paul Cluver Pinot noir barrels in the cellar. The best barrels of the site are then selected and blended to form the Seven Flags Pinot noir. Total new wood component equates to 14%, whereas the second fill barrels are 41% with the rest 3rd and 4th fill.

Paul Cluver Seven Flags Chardonnay 2018

We were very fortunate to have had four very exceptional successive vintages for Chardonnay. With the 2015 vintage we produced a very elegant Chardonnay that was very tight with great freshness. 2016 was a vintage with great opulence and more richness. The 2017 vintage gave us a combination of characteristics of both the 2015 and 2016 vintages. The Seven Flags Chardonnay 2018 is a great combination between elegance and concentration. The wine shows a light hay hue and the nose is expressive with notes of fresh citrus zest which is complimented by stone fruit and hints of oak. The palate is an exciting combination of crisp citrus fruit with great complexity, concentration and hints of oak in the background. The wine is elegant with a long and lingering finish.

Winemaking: Grapes selected from the oldest Chardonnay vineyards on our Estate was whole bunch pressed, settles without any settling agents. The wine was then transferred to barrel for fermentation, a 100% non-inoculated fermentation in a selection of French oak barrels. (30% new, the rest 2nd and 3rd fill.) Lees stirring was done to a lesser degree than previous years to retain freshness. The wine remained on the lees for a total of nine months without any sulphur addition. A small proportion of the total blend underwent malolactic fermentation, we like to retain as much as possible natural acidity which give great freshness to the wine.After tasting and blending trials, the wine was assembled from the best barrels; stabilized and prepared for bottling
