Vinification:
Specially selected Grenache grapes were harvested first at 21.9°B and kept on the skins for 6-12 hours. Only free run juice was cold fermented at 14°C in stainless steel tanks. A few weeks later the specially selected Shiraz grapes were harvested at 21.7°B and kept on the skins for 6-12 hours. Only free run juice was cold fermented at 14°C in stainless steel tanks.
Blending took place after fermentation.

Gale force winds with icy rain caused damage in the middle of our flowering season. The rest of our summer season was dominated by dry East winds. The smaller crop and dry conditions further helped the earlier ripening of this harvest. Our harvest commenced on the 2nd of February, one week earlier than normal. Healthy grapes with smaller berries and less juice was the norm.

Vinification:
The grapes were cold soaked for 3 days prior to fermentation. Fermentation temperatures were controlled between 22 and 26°C. We had a total of 21 days skin contact during fermentation. Pump-overs were effected thrice daily. 100% of the wine was matured for 12 months in 300L French oak barrels, mostly second and third fill.

The winter of 2012 was one of the wettest and longest yet, with cool, frosty evenings and average temperatures around 11°C. Cool, moderate temperatures continued with a dry start at the onset of Spring. In October heavy rainfall (130mm recorded for the month) and strong winds broke the dry spell during the crucial stage of flowering. Despite the concerns that the strong winds would damage the 2013 crop, the vines recovered well.
The summer months from November through to January were dry with the highest temperatures peaking at 29°C. The grapes were hand harvested at full ripeness between the 5th and 19th of March.

Layered wine with a vibrant ruby red colour and classic elegance. Exuberant cherry and strawberry notes with fragrant spiciness and distinctive savoury, earthy characters complimented by fine tannins and a long finish.

Vinification: After destemming the berries was cold soaked at 10 ̊C for 5 days to extract colour and soft tannins. After inoculation with selected yeast strains, the wine was fermented at 23 ̊C with pump overs three times daily. Once dry, the wine was racked and pressed, followed by 11 months barrel maturation in 300 litre French oak barrels.

November was very wet with a high 150mm rainfall, December was very humid and January did not have the normal southeasterly winds but did have 100mm of rain. These conditions were not the typical Mediterranean climate normally experienced.
Fortunately our stony gravel soils drain quickly and February and March were dry and cool so our grapes were still healthy.
The resulting conditions produced fresh wines with a 1% lower than usual alcohol level.
